Let's Do Lunch!

One cup of organic, creamy tomato soup,

accompanied by .........

one slice of whole wheat toast (slightly crisp),

served "open-face" with 2 thinly sliced, juicy, sweet, 

Beefsteak tomatoes,

fresh spinach, a drizzle of olive oil, a dash of salt and pepper,

and a sprinkle of shredded Swiss and Gruyere cheese - 

baked in the oven,

until the cheese melts into gooey yumness.

Warm, healthy, delicious...............................

Autumn Lunch goodness.
